CHRISTMAS MINCEMEAT
Ingredients:
75 g (3 oz) light suet
650 g (1 lb 10 oz) chopped mixed dried fruit, example, currents, sultanas, raisins and prunes.
100 g (4 oz) dried cranberries
100 g (4 oz) glacι cherries, chopped
1 small dessert apple peeled, cored and grated
50 g (2 oz) blanched almonds, chopped
200 g (8 oz) soft brown sugar
½ teaspoon freshly grated nutmeg
½ teaspoon freshly ground cinnamon
½ lemon, grated rind and juice
1 tablespoon grated orange rind
2 tablespoons orange juice
120 ml (Ό pint) brandy, whisky or sherry
You will also need 2-3 empty jars.
PREPARATION:
1.To make the mincemeat, mix all the ingredients together well in a large bowl. Cover and leave for 2 days, stirring a couple of times a day.
2.To sterilise jars, preheat the oven to 140°c or 275°f. Wash the jars in hot soapy water, rinse then dry in the oven for approximately 10 minutes. Allow jars to cool fully before filling with mincemeat.
3.Cover with an airtight lid, label and store in a cool dark place for at least a week before using.
